Receive before you believe the plate
Until stock is received against a PO, the system still holds an expected or prior average. GRN is the moment quantities and landed cost enter the ledger.
Then revisit the recipe
After a material price move, open Recipe & BOM and confirm plate cost refreshed from moving average. Sell-through without that refresh is how chefs discover weekend variance too late.
